PINEAPPLE KESARI | HOW TO MAKE KESARI RECIPE | INDIAN SWEETS RECIPES

Pineapple Kesari is an Indian dessert made with Sooji ( Rava , Semolina ) , ghee and some Pineapple Puree . This Kesari has  the  flavor of Pineapple that makes it more delicious  . I have made this pineapple Kesari Similar to my Rava Kesari Recipe . My kids absolutely loved this Pineapple Kesari . So now off to today's post Pineapple Kesari Recipe .

Pineapple Kesari - Ingredients

Preparation Time :10 minutes  | Cooking Time : 15 minutes
Recipe Category:
Dessert  | Recipe Cuisine: South Indian
  • Semolina / Rava / Sooji - 3/4 cup
  • Water - 1 1/4 cups
  • Fresh Pineapple Puree - 1/4 cup
  • Sugar -  3/4 cup
  • Butter - 1stick
  • Yellow Food Color - 1 pinch( Optional )
  •  




    Method :

    • Take the chopped Pineapple slices in a blender . Puree them in to a smooth paste without adding water . 

    • Melt the butter in a wok . 
    • Fry the semolina ( rava ) in the butter till the raw smell goes away .
    • In a shallow pan add 1 1/4 cups of water  , Pineapple Puree , Yellow food color and bring the contents to a rapid boil.

    •  Transfer the boiling Contents  to the fried rava and mix that no lumps are formed and make sure that the rava / Semolina is cooked.

    • Add the sugar and mix till the sugar gets melted.

    •  Turn off the stove  before the kesari gets thickened . The kesari should not be too watery nor too thick . Serve Pineapple Kesari warm. 

    • This is a wonderful and a easy dessert , One of my kids Favorite dish and it could be prepared in 15 minutes. Yummy Pineapple Kesari is ready to serve . 
    Notes :

    • Adding food color to kesari is optional .
    • Butter can be replaced by ghee or Oil .
    • Fried cashew can be added to the kesari when serving .

    SWEET CORN VADA RECIPE | HOW TO MAKE SWEET CORN VADAI RECIPE

    Sweet Corn Vadai is a simple , easy and quick recipe made with Very few ingredients from your kitchen pantry . My kids loved this sweet corn vadai . I made this Sweet cornVadai in a similar pattern to Masal vadai . So now off to today's post Sweet Corn Vadai Recipe .

    Sweet Corn Vadai - Ingredients

    Preparation Time :5 minutes  | Cooking Time : 15 minutes
    Recipe Category: Sides  | Recipe Cuisine: South Indian 
     
    • Sweet Corn - 2 numbers , kernels removed
    • Green Chilli - 2 numbers
    • Garlic pods - 2 number
    • Ginger - 1/2 ' piece , chopped
    • Fennel seeds - 1/2 teaspoon
    • Roasted channa Dal powder - 1 tablespoon ( pottukadalai Powder  , Daliya powder )
    • Salt - To taste 
    • Oil - For Frying

      Method :

      • Remove the Kernels from the sweet Corn .



      • Take a food processor , add the green chilli , garlic pods , ginger and fennel seeds . Crush them,


      • Add the corn Kernels , salt  to them and run them coarsely by sprinkling water if needed .

       
      • Transfer the ground Sweet corn paste to a bowl . Add the roasted channa dal powder and mix well .


      • Heat oil for frying . Make small patties of the coarse sweet corn paste and drop them in hot oil .


      • Fry till they become golden brown color .


      • Sweet Corn Vada is ready to serve . Serve the sweet corn vada with ketchup . Enjoy this sweet corn Vada with some Juice or a Chai ( Tea ) in the evening .

      CABBAGE PEAS PORIYAL | MUTTAIKOSE PATTANI PORIYAL

      Cabbage Peas poriyal is a simple quick Vegan stir fry recipe made it  a jiffy . This Poriyal goes well with Steamed Rice , Sambar and Rasam recipe .       Cabbage Peas Poriyal - Ingredients

      Preparation Time :10 minutes  | Cooking Time : 15 minutes

      • Cabbage - 1/2 cup , Shredded
      • Peas - 1 cup ( Soaked Overnight ) or Use frozen peas
      • Onion - 1 number , chopped
      • Oil - 1 teaspoon
      • Mustard Seeds - 1/2 teaspoon
      • Urad dhal - 1/2 teaspoon
      • Red Chills - 3 numbers , Slit
      • salt - to taste

        Method :

        • Soak the Peas Overnight .



        • Heat oil in a wok . Add the mustard seeds and allow it to pop . Add the urad dhal and allow them to splutter . Add the red chillis and fry for few seconds . 



        • Add the chopped onions and cook till they become soft .


        • Add the soaked peas , some water and salt . Bring the contents to a boil .


        • Cook till the Peas become soft . Now add the chopped cabbage .


        • Cook till the cabbage become soft  ,  till the water becomes completely evaporated and till the poriyal becomes dry .


        • Cabbage Peas Poriyal is ready to serve . Enjoy the cabbage Peas Poriyal with Steamed Rice and a curry .

        Mushroom 65 is a Spicy hot tasty recipe made with just few ingredients from your Pantry . I have tasted Mushroom 65 in the restaurants and this is my first attempt to make at home . My Kids Akshita and Nishita thoroughly enjoyed this dish . Now off to Today's post Mushroom 65 recipe .

        Mushroom 65 - Ingredients

        Preparation Time:10 minutes | Cooking Time : 10 minutes
        Recipe Category: Starter | Recipe Cuisine: Indian

        • Mushroom - 1 packet , Cleaned and Chopped ( Click here for the recipe )
        • Oil - For Frying

        To Marinate :

        • Mushroom - Chopped , 200 Grams ( Click here for the recipe )
        • Ginger Garlic Paste - 1 teaspoon ( Click here for the recipe )
        • Turmeric Powder - 1/4 teaspoon
        • Yogurt - 1 teaspoon ( Click here for the recipe )
        • CornFlour Powder - 1 teaspoon
        • Curry Powder Or Red Chili powder - 1 teaspoon ( Click here for the recipe )
        • Salt - To taste

          Method :

          • Clean and Chop the Mushrooms as per the directions as here .

          • Take a shallow Bowl , add the cleaned and Chopped Mushroom , Ginger Garlic paste , Turmeric powder , Yogurt , Corn flour Powder , Red chilli Powder and salt to taste . Mix the contents well .
          • Set aside the Marinade for 30 Minutes .


          • Heat oil in a shallow pan . Add the marinated Mushroom and Cook till they become Golden brown color .


          • Mushroom 65 is ready to serve .


          • Serve this Mushroom 65 as a starter . 

          Notes :
          • While coking the Mushroom oozes out some water , so do not add any water while marinating.
          • The mushrooms can also be deep fried . I did a shallow fry for this recipe .

          HOW TO CLEAN AND CUT MUSHROOMS

          I was  not a great fan of Mushroom earlier . I used to have  the Mushroom dishes only in the restaurants , thinking the cleaning and cutting is a bit tedious , but its actually not really so .  So now off to today's post " How to clean and cut mushroom "

          How to Clean and cut Mushroom -Ingredients

            • Mushroom - 1 packet 
            • Water - As needed

                Method :

                • Take a mushroom , remove the outer layer skin of the mushroom .

                • Chop the tip  of the stem .


                • Slit the mushroom in to halves . chop the remaining stem and set aside .


                • Remove the hairy part of the Mushroom ( This step is purely optional , but i like the mushrooms without the hairy part )


                • Chop the mushrooms and immerse them in water till use .


                • Use the chopped Mushroom to make your favorite  dishes .
