Lamb Eggplant Stew / Aatu kari Katharikkai Kulambu / ஆட்டு கரி கத்தரிக்காய் குழம்பு

I am a great fan of mutton recipes . This recipe is my grand mothers recipe which is passed to my mom and now to me . When I was a kid my mom makes this recipe weekly once and I used to love this .  The combination gives a unique flavor and taste which will surely impress the one to whom you are cooking for . It requires 4 major ingredients and made quickly too .

Lamb Eggplant Stew / Aatu kari Katharikkai Kulambu / ஆட்டு கரி கத்தரிக்காய் குழம்பு
Ingredients:

  • Lamb / Goat pieces - 200 gm , chopped ( Preferably with bones )
  • Eggplant - 3 no , Diced length wise ( I used 2 long Chinese Eggplants )
  • Onion - 1 no , Chopped Lengthwise
  • Oil - 2 tsp
  • Red Chilli Powder - 2 tsp ( Sambar Powder could be used too )
  • Corriander Powder - 1 tsp
  • Turmeric Powder - 1/2 tsp
  • Salt - To taste

To Grind: 

  • Grated Coconut - 1/2 cup
  • Cumin seeds - 1 tsp
  • Fennel seeds - 1 tsp
Method:

In a pressure cooker , heat oil . Add the onions and cook till they become translucent .


Grind together coconut , fennel seeds and cumin seeds in to a paste by adding little water . Set aside .


Add the Lamb / Goat pieces  , chilli powder , Coriander powder , turmeric powder , salt and mix .


Add the ground paste and add water  and bring the contents to a boil .


Cover with the lid and pressure cook the contents for 10 minutes or till the Mutton pieces become tender . Now add the chopped Eggplant .


Cover with the lid and pressure cook for only 1 hisses . Turn off . Garnish with Cilantro leaves .


Serve hot with steamed rice , any flat breads and also Idly and Dosa recipes .

strawberry juice recipe

Strawberry has amazing heath Benefits .  I was not a fan of strawberry earlier , but after reading about the benefits , I was amazed by its qualities . It aids in Glowing skin and keeps the wrinkles away . It is loaded with Vitamin C .

We had a box of strawberries in our home which was sour in taste , so I made this juice with the strawberries .They tasted so Good . Myself and my daughters enjoyed the juice on a hot Summer evening . Off to the recipe now .

Ingredients:

  • Strawberry - 12 to 15 nos
  • Water - 2 cups
  • Sugar - To taste
  • Lemon Juice - ( Optional ) Depending on the sourness needed . I did not use it ,  as my strawberries were sour

Method:

In a mixer add the chopped strawberries , add some sugar .



Grind it to a smooth paste .


Now add two cups of water to the concentrate and mix . Filter the mixture using a muslin cloth .


Add lemon juice if needed .


Add some Ice cubes .


Serve Chilled .

Vegetable sandwich recipe

My daughters like sandwiches. After posting the Banana sandwich , i wanted to post another sandwich recipe . I had few Pinto bean patties left over , so i used those patties in this sandwich along with some veggies . Off to the recipe.

Vegetable sandwich recipe



Ingredients:

  • Bread slices - 2 no
  • Pinto bean patties - 2 no
  • Shredded onions - 1 tbsp
  • Tomato - chopped , 1 tbsp
  • Lettuce - shredded , 1 tbsp 
  • Butter - 1 tsp ( Vegans can substitute this with 1tsp of oil ) , Optional 

    Method:

    Preheat the sandwich maker if you are using it , Or it could be made in a tawa as well.Take the bread slices and apply Butter / oil to one side . This step could be skipped for a healthy version . Place one slice on the sandwich maker . Top it with the patties and add onion , tomato lettuce to it .


    Place another slice on top of this bread .




    Grill the bread with the sandwich maker , or it could be toasted in a tawa .


    Cook till the bread is toasted well .


    Serve hot with Ketchup

    Pinto Bean Patties / Pinto Bean Cutlet - Low Fat Recipe

    Pinto Bean Patties  /  Pinto Bean Cutlet


    Ingredients:

    • Pinto Bean - 250 gm ,  Boiled ( Canned Bean could be used as well )
    • Ginger Garlic Paste - 1 tsp
    • Green Chilli Paste - 1 tsp
    • Garam Masala Powder - 1 tsp
    • Boiled potato - 1 no , Mashed
    • Bread crumbs - 1 tbsp
    • Salt - To taste 
    • Oil - 2 tsp
    • Lemon juice - 1 tsp


    Method: 

    Soak the pinto beans over-nite in water  , and boil it in the morning till it becomes soft  . Drain the water completely .  Add this to the mixer or a Food processor and grind it with some salt .


    Heat oil . Add the Ginger Garlic paste , chilli paste , garam masala powder and fry till the raw smell goes away .


    Now add the ground pinto bean  and mix well . Add the mashed potatoes , lemon juice and mix well . Add salt if needed .


    Add the bread crumbs and mix well . Make small balls with the  cooked masala .


    Pat it in to a flat shape like a pattie . Spray some oil in a flat griddle , Add the patties and fry till it becomes brown in color .


    Serve hot with a sauce . Use this patties along with the buns and make a burger or use this patties with bread to make some yummy sandwich .

    Homemade Ginger Garlic Paste

    The Ginger Garlic paste is one of the important ingredient in my kitchen . Most of the Indian cooking require this ginger garlic paste . Initially i used to buy this paste from grocery store , but not anymore . Homemade paste is more flavorful and aromatic compared to the ones sold in market ,as this is made with out any preservatives , so why not go ahead and make it rather than buying it .

    Homemade Ginger Garlic Paste

    Ingredients:

    • Ginger - 250 gms
    • Garlic - 250 gms
    • Salt - 2 tsp
    • Oil - 3 tsp


    Homemade Ginger Garlic Paste
    Method: 

    Take ginger and Garlic in 1:1 ratio .



    Peel the garlic skin and also peel the skin from ginger and dice it . Transfer them to the food processor or a mixer and pulse it once . Now add the salt and oil and puree them to a paste . Add water if needed .



    Take a clean jar , and transfer them to an airtight container and refrigerate it . I divided my paste in to two and freezed another jar and refrigerated the other jar .


    Use the paste as needed to use in the curry or Rice varieties .

    Paneer Korma / Paneer Kurma - No Onion , Tomato , coconut method

    This Korma is made with out coconut  . Its very easy and a quick recipe . This is adapted from sanjeev Kapoor recipe . Off to the recipe now .

    Paneer Korma / Paneer Kurma

    Ingredients:

    • Paneer -  250 gms , cut in to cubes 
    • Yogurt - 1 cup , beaten
    • Ginger Garlic paste - 2 tsp
    • Green chilli paste - 1 tsp
    • All purpose flour - 2 tsp
    • Turmeric powder - 1/2 tsp
    • Water - 1 cup
    • salt - to taste
    • Garam Masala powder - 1 tsp

    Tempering:

    • Oil - 1 tsp
    • Cloves - 2 no
    • Pepper corn - 1 tsp
    • Cinnamon stick - 1 no 
    • Star Aniseed - 1 no
    Method:

    Take the yogurt in a bowl , add the turmeric powder , All purpose flour , green chilli paste , ginger garlic paste , salt .



    Add water and mix well . Set aside . Fry the paneer cubes and set aside .



    In a heavy bottom pan , add oil and add the cinnamon stick , cloves , star aniseed , pepper corn  and fry for few seconds . It gives out a nice aroma .


    Add the mixed yogurt to it .



    Bring it to a boil . Now add the paneer cubes and garam masala powder .



    Mix well .




      This goes well with naan .
