Plain Dosa/ South indian Crispy pancakes

Plain Dosa
Urad dal- 1 cup
Idly rice OR Boiled rice- 5 cups
Methi seeds- 2 tsp
Salt- 5 tsp
Oil-1/2 tsp(Optional)

Dosa Batter Preparation.
Wash rice and methi seeds and soak it in water overnight.
Wash urad dal and soak it in cold water for about 45 mts to an hour.
I use wet grinder for grinding.First grind the urad dal for about 40 mts by adding little water.
Transfer it to a vessel.
Then add soaked rice to the grinder and run it for about 45 mts.
Transfer it to a vessel and mix both the batter together by adding salt.
Allow it to ferment and leave it asider for 10-12 hrs or overnight.

Dosa preparation:
Heat a flat pan.
Pour a ladle full of batter on the pan and move the ladle in a spiral way to make dosa.
Add oil around the dosa.Cover it with a lid on top or just turn aside making it to cook on both sides.
Now crispy dosa is ready.
Serve with sambar and chutney
