Pasiparuppu sambar / Moong dal sambar

Pasiparuppu sambar  / Moong dal sambar

Ingredients:
Moong dal-1 cup
Turmeric powder-1/4 tsp
Hing-1 pinch
Oil-2 tsp
Mustard seeds-1 tsp
Urad dal-1 tsp
Methi seeds-1/2 tsp
Cumin seeds-1/2 tsp
Salt- to taste
Curry leaves-1 spring
coriander leaves
Onions-1 chopped
Tomatoes-1, chopped
Tamarind juice-1/4 cup
Any vegetable -(carrots+cauliflower)-chopped
Sambhar powder-2 tsp
Red chilli-2 nos slit


Preparation:
In a pressure cooker, add the moong dal,some water,turmeric powder, hing,chopped vegetables, sambar powder,onions ,tomatoes and pressure cook for 3 whistles.
In a kadai, heat oil, add mustard seeds, urad dal, methi seeds, cumin seeds, red chillies,curry leaves and coriander leaves and allow it to splutter.
Now add tamarind juice and bring it to boil .Transfer these contents to the cooked moong dal and mix well.Check for salt .Garnish with coriander leaves.
Serve hot with rice,idly, dosai, ven pongal.

Okra masala / Bhindi  masala

Ingredients:

Okra -250 gm Chopped
Onion-1 med size chopped
Sambar powder-1 tsp
Turmeric powder-1 pinch
Mustard seeds-1/2 tsp
Urad dal-1 tsp
Oil-4 tsp
Salt-to taste

Preparation:

In a kadai, heat oil add mustard and urad dal and allow it to splutter
Now add onions and stir and cook till it becomes soft.
Add Chopped okra , turmeric, and sambar powder, salt and allow it to dry roast
Serve hot with rice , rotis.

Tomato Pepper chicken curry

Tomato Pepper chicken curry
Ingredients:

Chicken-1/2 kg
Red chilli- 12 nos
Turmeric powder- 1 tsp
Onion-1 nos big size, chopped
Tomatoes-1 no big size, chopped
Salt-To Taste
Oil-1/2 cup
Cumin powder-2tsp
pepper powder- 2 tsp
Water-1 cup
Gingely oil- 2 tsp

Preparation:
Cut the chicken and add turmeric powder to it .Mix well and set aside for 30 mts.
In a pressure cooker add the oil , after it is heated add the chopped onions and slit red chillies and cook till onion becomes soft.
Add the tomatoes and cook till it becomes mushy
Now add the cut Chicken pieces and stir.
Add turmeric, cumin and pepper powder, Salt and water and pressure cook it for 10 mts in medium flame.
Open the pressure cooker and transfer these contents to a kadai and allow the water to evaporate to 50%.
Now add the gingely oil and stir and simmer it to med flame and cook till the oil separates out from the mixture.
Serve hot with rice, roti, puri

 Onion Raitha  / Vegetable Raitha / Vengaya Pachadi / வெங்காய பச்சடி


Ingredients:

  • Yogurt / curd- 1 cup beaten
  • Onion -1 no , minced
  • Carrots - 2 tsp , grated or chopped
  • Cucumber - 2 tsp , chopped
  • Coriander leaf- 1 tsp, chopped
  • Salt-to taste
  • Green chilli-1 no slit

Recipe:

In a bowl, add the beaten yogurt / curd , green chilli and salt and whisk.

Wash the chopped onion in water .This will remove the hotness from onion.
Add the onions, carrots,  cucumber  to curd and whisk .


Garnish with coriander leaves.


serve with hot biriyani, parathas, and roti.

Garlic curry / Poondu kulambu

Ingredients:

Onion- 1 big size, chopped
Curry leaves-1 spring
Tomatoes-1 no, chopped
Tamarind juice extract-1/2 cup
Garlic pods-25nos
Sambhar powder-1 tsp
Turmeric powder-1 pinch
Gingely oil-4 tsp
Methi seeds-1/2 tsp
Mustard seeds-1/2 tsp
Urad dal-1/2 tsp
Salt-to taste

Preparation:

In a Kadai, heat oil, add the mustard seeds and allow it to pop.
Now add urad dal, methi seeds, garlic pods and stir till raw smell goes from garlic.Add the curry leaves.
Add onions and cook till it becomes soft.
Now add the tomatoes and cook till it is soft.
Add the sambhar powder,salt and turmeric powder and stir for a minute.
Add the tamarind juice and bring the mixture to boil.
Cook till the oil separates out of the curry.
Serve hot with rice.

Roasted Corn on Cob  in India

I was on a vacation to India this summer.One of my favorite street food is roasted corn , and i stopped by the stall.Here goes the recipe of the roasted corn done by the street vendor.

Ingredients:

Corn-1 no
Salt-to taste
Chill powder-to taste
Lime juice-1 to 2 drops

Recipe:

Remove the husk from the corn.
Place it on the fire, rotate them with a pair of tongs while grilling so that all the sides are evenly cooked.
This is similar to grilling corn on BBQ
After the sides are cooked, spread salt ,chilli powder and lime juice evenly.
Now corn is ready to eat

Spring Onions Sambar / Lentil soup with Spring onion


I had a bunch of spring onions in my refrigerator which was left over after i made fried rice , so i thought of trying this recipe.Here goes the recipe of sambar made with spring onions.

Ingredients:

Toor dal-1 cup
Turmeric powder-1/4 tsp
Hing-1 pinch
Oil-2 tsp
Mustard seeds-1 tsp
Urad dal-1 tsp
Methi seeds-1/2 tsp
Cumin seeds-1/2 tsp
Red chilli-2 nos
Curry leaves-1 spring
coriander leaves
Spring Onions-1 bunch ,chopped
Tomatoes-1, chopped
Tamarind juice-1/4 cup
Any vegetable -(carrots+cauliflower)-chopped
Sambhar powder-2 tsp
Green chilli-2 nos slit

Preparation:
In a pressure cooker, add the toor dal,some water,turmeric powder, hing and pressure cook for 3 whistles.
In a kadai, heat oil, add mustard seeds, urad dal, methi seeds, cumin seeds, red chillies,curry leaves and coriander leaves and stir.
Now add the Spring onions and green chills and cook for 3 min.
Now add the tomatoes and stir.
Add the chopped vegetable,sambhar powder, salt and tamarind juice and allow it to boil .
Transfer these contents to the cooked toor dal and mix well.Check for salt and allow it to cook in pressure cooker for 1 whistle or cook in open pan for 15 -20 minutes till the vegetables are cooked.
Garnish with coriander leaves.
Serve hot with rice,idly, dosai, ven pongal.

Coconut chutney / Thengai chutney / white chutney / Chutney Recipe / தேங்காய் சட்னி



Ingredients:

To Grind:
  • Shredded Coconut - 1/2 cup
  • Roasted Channa Dal - 1/4 cup
  • Green chilli -1 no
  • Garlic - 2 pods
  • Ginger - a small piece 
  • Salt - to taste
Tempering:
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Red chill - 1 no
  • Oil -1 tsp
  • Curry leaf - 1 spring

Recipe:

Take the shredded Coconut in a mixer .

Now add the roasted Channa dal , garlic pods , green chilli ,salt  and grind it to a paste by adding little water.


Check for the consistency of the chutney, it should not be too watery or too thick.


Heat oil in a kadai, add mustard seed and allow it to splutter.
Now add the urad dal, and split red chills and curry leaf.


Transfer these contents to the chutney.


Serve with hot idly.

Kadai Paneer

Kadai Paneer

Ingredients:
paneer - 400 gm(cut in to small size cubes)
Capsicum / Bell peppers- 3 nos , any color(Diced)
oil- 6 tsp
tomatoes-4 nos, Chopped
Ginger-1' piece
chili - 2 nos
Hing- 1 pinch
Cumin seeds-2 tsp
Coriander powder- 2 tsp
Turmeric powder-1 pinch
Red chilli powder-1 tsp
Salt-to taste
Fenugreek leaf powder-2 tsp

Recipe:
Blend the tomatoes, ginger, and green chili to make a paste in a mixer
Heat the oil in frying pan and fry paneer for about 2 minutes.Take them out.
Next stir-fry capsicum until they are tender. Do not over cook the capsicum. Take them out and drain on a paper towel.
Using the same frying pan, pour some oil and add the hing and cumin seeds.
After the cumin seeds crack, add the tomato puree, coriander powder, turmeric, fenugreek leaves and red chilli powder.
Cook for about 4 minutes on medium heat.
Cook till the oil separates out from the gravy
Add some water to the gravy and bring it to boil , Now add the salt.
Add paneer and capsicum and let it simmer for about five minutes on low medium heat.
Now it is ready to serve.

Ingredients:

Milk- 1/2 glass
Water-1/2 glass
Tea powder-1/4 tsp
sugar-to taste
Milk powder-1/2 tsp(optional)
Ginger-1/4 ' piece (crushed)
clove- 1 no
Cinnamon stick-1/4'
Pepper corns-3 nos
Cardamom-1 nos

Recipe:

Bring the water to boil in a kettle or a vessel or a pot.
Add the tea powder and crushed ginger,cloves,cinnamon stick ,cardamom and pepper corns to it and allow it to boil well.
Now add the milk to it and stir.
Add sugar and mix.
Now add the milk powder to it.It makes the tea thicker and gives a good taste to it.
Turn off.Serve hot

Ginger is a medicinal root . Adding this to the tea gives a unique flavor . It helps to protect the body form cold and flu and also helps in digestion . With so much benefits of ginger so why not add this to the tea .

Ingredients:

  • Milk - 1 cup
  • Water - 1 cup
  • Tea powder - 1 tsp
  • sugar - to taste
  • Ginger - 1 ' piece (crushed)

Method:

Add the water ,milk , tea powder , crushed ginger  in a kettle or a vessel or a pot and bring it to a boil .



Filter it , add sugar if needed .



Serve hot .


Enjoy this with some biscuits .

Water-1/2 glass
Tea powder-1/2 tsp
sugar-to taste
Milk powder-1/2 tsp(optional)
cocoa powder-1/4 tsp

Recipe:
Bring the water to boil in a kettle or a vessel or a pot.
Add the tea powder and cocoa powder to it and allow it to boil well.
Now add the milk to it and stir.
Add sugar and mix.
Now add the milk powder to it.It makes the tea thicker and gives a good taste to it.
Turn off.Serve hot

Ingredients: 
  •  Milk - 1/2 cup
  • Water - 1/2 cup
  • sugar - to taste
  • cardamom - 2 nos, slit
  • Tea Powder - 1 tsp
cardamom chai / cardamom tea / Elachi chai / ஏலக்காய் டீ / yaelakkai Tea


Recipe: 

Add the water, milk, cardamon , Tea powder in a kettle or a boiling pan .


Bring the contents to a boil .

Filter using a strainer .


Add sugar if needed .Serve hot .


Enjoy this cup of tea with some Biscuits .

During my recent visit to munnar, ( Kerala , India ) I was impressed by the breath taking scenic views of tea estates which seems to carpet the city with lush greenery.Munnar is famous for its tea ,so i purchased a packet of tea powder .Here goes the recipe of tea.

Chai Latte / Indian Chai / Indian Tea


Ingredients:

  • Milk - 1 cup
  • Water - 1/2 cup
  • Tea powder - 1 tsp
  • sugar - to taste( optional )



Recipe:

In a heavy bottom vessel add the milk , water and tea powder and mix .



Bring the contents to boil .


Boil in medium flame for few minutes .

Filter using the strainer .

Add sugar if needed .


Serve hot. Enjoy with some biscuits .
